Oatmeal Coconut Cookies



The combination between oatmeal, coconut, vanilla and cinnamon is just divine and I'm telling you : you'll love this recipe. These cookies are super easy to make, ingredients easy to find and you'll have a good amount on your hand (I ended up with 21 big cookies). They will melt in your mouth. And if you have your friends coming over these delicious cookies and the perfect ones to make. + your kitchen will smell... well I think you have to cook them to figure it out !!!

Kombinimi mes tersheres, arres se kokosit, vaniljes dhe kanelles eshte thjeshte e mrekullueshme dhe po ju them qe ju do ta dashuroni kete recete. Keto biskota jane shume te thjeshta per tu pergatitur, me perberes qe gjendet kollaj dhe do te kene nje mase te mire ne duar (une perfundova me 21 boskota te medha). Ato do t'ju shkrijne ne goje. Dhe nese keni miq te cilet do vijne ne shtepine tuaj keto biskota te shijshme jane perfekte per kete rast. + shtepia juaj do te mbaje ere te... epo mendoj se duhet ti gatuani per ta kuptuar !!!


Ingredients for oatmeal coconut cookies:
  •  250 gram unsalted butter at room temperature 
  • 250 gram brown sugar
  • 250 gram oatmeal (old-fashioned or not, you choose)
  • 200 gram flour
  • 100 gram coconut flakes
  • 2 eggs 
  • 1 tsp (5 gram) baking powder
  • 1 tsp (5 ml) vanilla extract 
  • 1/2 tsp (2.5 gram) salt
  • 1/2 tsp (2.5 gram) cinnamon 

Perberesit per biskotat me tershere dhe arre kokosi : 
  • 250 gjalp jo i kripur, ne temperature dhome
  • 250 gram sheqer kaf
  • 250 gram tershere (e copetuar apo kokerr, zgjedhja juaj)
  • 200 gram miell
  • 100 gram arre kokosi e grire
  • 2 veze
  • 1 tsp (5 gram) baking powder
  • 1 tsp (5 ml) ekstrakt vaniljeje 
  • 1/2 tsp (2.5 gram) kripe 
  • 1/2 tsp (2.5 gram) kanelle 
In a bowl cream together the butter and sugar. Scrape the sides of the  bowl time after time with a spatula making sure the batter is mixed same
Ne nje tas rrih se bashku gjalpin dhe sheqerin derisa masa te jete  kremoze. Here pas here me nje spatul mblidh masen ne anet e tasit ne  menyre qe masa te rrihet e tera ne menyre te njejte
Add in the eggs one at a time while beating
Shto vezet nje nga nje gjate kohes qe perzien masen
Add in the baking powder, cinnamon, salt and vanilla extract. Beat well 
Shto baking powder, kanellen, kripen dhe ekstraktin e vaniljes. Perziej mire 
Add flour and mix in (do not over-beat)
Shto miellin dhe perziej (mos e rrih me shume se cduhet)
Add in the oats and coconut flakes and mix well with a spatula or spoon
Shto tersheren dhe arren e kokosit dhe perziej mire me nje spatul ose me nje luge
Place some baking paper on the cookie sheet. Using an ice-cream scoop or 2  spoons divide the batter on the cookie sheet, make sure to put them  apart each-other because they will spread as they bake
Vendos leter furre ne tepsine ku do ti pjekesh biskotat. Duke perdorur nje  luge akulloreje ose 2 luge normale shperndaje brumin ne letren e furres, duke u siguruar qe ti shperndani masat larg njera tjetres pasi brumi gjate pjekjes do te hapet
Baking Temperature : 180 grade C,    Timing :  12 minutes (or until cookies have this golden brown look, make sure for them not to turn into brown)
Temperatura pjekjes : 180 grade C,    Kohe-zgjatja :  12 minuta (ose derisa biskotat te kene marre nje ngjyre kafe te arte, kujdesuni qe te mos kalojne ne ngjyre kafe)
Let the cookies cool on the baking sheet for 5 minutes and then place them somewhere else, letting them to cool completely 
Lerini biskotat te ftohen ne letren e furres per 5 minuta dhe me pas vendosini diku tjeter duke i lene mundesine te ftohen plotesisht
