Cheesecake (Basic Recipe) / Cheesecake (Receta Baze)


This is a new version of cheesecake I cooked for my family dinner yesterday. If you are my Insta follower you already know that, since you requested the recipe asap in blog and I wanted to publicly apologize for the late posting of recipes, I've been really busy with work and projects and didn't have the chance to settle down and write the posts. But here I have the recipe ^_^ This is the gelatin version of the cheesecake. Still no-bake and cookie base cheesecake, its summer so I want the desserts to be same. This is a...well heavy recipe, but hey its cheesecake so yeah It's supposed to be that way. But besides that its a great refreshing dessert and It's the perfect choice for a family or friends dinner, some salad, light pasta and then wala cheesecake and champagne; perfect combination.  It's a super easy recipe (you all know I'm a lover of simple great recipes) and there is nothing you wont understand after reading my steps. You can decorate the cheesecake however and with whatever you want it... So go to the kitchen and let's get this party started !!!

Ky eshte nje version i ri i Cheesecake qe une gatova per darken familjare mbreme. Nese jeni nje ndjekes ne Instragram-in tim atehere ju e dini kete gje, sepse ju kerkuat qe kjo recete te postohej sa me pare ne blog dhe doja publikisht tju kerkoja te falur per vonesen ne postim te recetave, kam qene shume e zene me punen dhe projektet dhe skam pasur kohe te shtrohem dhe te shkruaj postet. Por ja ku jam me receten ^_^ Ky eshte versioni me xhelatine i cheesecake. Perseri pa pjekje dhe baza biskote, eshte vere dhe dua qe embelsirat e mia te jene te njejta. Kjo eshte nje....epo recete e rende, por hej eshte cheesecake keshtu qe po presupozohet te jete e tille. Por pervec kesaj eshte nje recete e mrekullueshme dhe freskuese and eshte zgjedhja e duhur per nje darke familjare apo mes miqsh, pak sallate, pasta e lehte dhe uala cheesecake me shampanje, kombinimi perfekt. Eshte nje recete shume e thjeshte (ju te tere e dini qe une jam nje dashamirese e recetave te thjeshta) dhe nuk ka asgje qe nuk do te kuptoni pasi te lexoni hapat e mia. Ju mund ta dekoroni cheesecake-un sido dhe me cfaredo deshironi... Keshtu qe shkoni ne kuzhine dhe le ta fillojme kete feste !!!


Ingredients for cheesecake :
  • 400 gram Digestive biscuits (you can use other kinds 2, like: Graham crackers, Ginger biscuits...) crushed with a food processor or a polythene bag with a rolling pin
  • 150 gram cold melted butter or margarine (sweetened)
  • 500 gram of Philadelphia cream cheese
  • 600 gram sour cream (unsalted) 
  • 200 gram sugar 
  • 200 ml water 
  • 4 gelatin sheets 
  • inside part of 1 vanilla bean  

Perberesit per cheesecake : 
  • 400 gram biskota te thjeshte Digestive(perdor kete lloj pasi llojet e thjeshta ne Shqiperi nuk kane cilesine dhe shijen e duhur dhe nuk duhet ta prishni embelsiren thjesht per zgjedhjen e biskotave) te thyera me mikser derisa te behen pluhur ose me qese plastike te mbyllur dhe okllai
  • 150 gram margarine e embel e shkrire e ftohte (perdor Bitay)
  • 500 gram Philadelphia (krem-djathi)
  • 600 gram salce kosi (jo e kripur)
  • 200 gram sheqer
  • 200 ml uje 
  • 4 flete xhelatine 
  • palca e 1 bime vaniljeje
  In a bowl filled with cold water add in the gelatin sheets and let them soften, make sure you have plenty of water. They need to rest for at least 12-15 minutes otherwise they will not dissolve later 
Ne nje ene te mbushur me uje te ftohte shto fletet e xhelatines dhe leri te zbuten, sigurohuni qe te keni uje me bollek. Duhet te qendrojne per te pakten 12-15 minuta, perndryshe do te hasni probleme shperberjeje ne hapin e metejshem 
 To make the cheesecake base mixture, you need to put in a normal sized bowl the crushed biscuits and the cold melted butter or margarine and mix well with your hand or a spoon
Per te bere bazen e cheesecake, duhet qe ne nje tas normal te vendosni biskotat e thyera dhe margarinen e ftohte te shkrire dhe te perzieni mire me dore ose me nje luge 
 Pour the base mixture into the cake tin and press it flat and even (will your hand or any cooking tool which is flat, you can use even the bottom of a water glass or whatever glass)  Leave it in the fridge while preparing the filling
Shtieje masen ne tepsi dhe hape me dore ne menyre te barabarte duke ushtruar presion (me ore ose me ndonje mjet kuzhine te sheshte) Lere ne frigorifer deri sa te mbarosh mbushjen
In a sauce pan make a simple syrup (equal : sugar + water) and let it boil for some minutes
Ne nje tenxhere pergatisni shurup te thjeshte (ne menyre te barabarte : sheqeri + uji) dhe lereni te vloje per pak minuta
 Turn off the oven and add the inside part of vanilla bean, mix with a spoon and set aside to let it lukewarm
Fik zjarrin dhe shto palcen e bimes se vaniljes, perziej me nje luge dhe lere menjane qe te vaket
  In a bowl add the cream cheese and sour cream and mix together 
Ne nje tas shto kremin e djathit dhe salcen e kosit dhe perziej se bashku 
 Take the soften gelatin sheets (make sure to be really soften) add it to the syrup and whisk it fast until gelatin dissolves 
Merr fletet e zbutura te xhelatines (sigurohuni te jene mese te zbutura) shtoja shurupit dhe perziej me nje rrahese dore shpejt masen derisa xhelatina te shperbehet 
Add the syrup while beating the cream cheese mixture 
Shto shurupin duke perzier masen e kremit te djathit 
 Take the base, pour the mixture onto the cheesecake base. With a spoon or a spatula try to make the surface smooth. Chill in the fridge for 6 hours, even more if you have time (to allow the cheesecake to set)
Merr bazen, shtiej masen dhe me nje luge ose spatul mundohu te krijosh ne shtrese te ngjeshur mire dhe nje siperfaqje te sheshte. Lere per 6 ore ne frigorifer, dhe me shume nese keni kohe (ne menyre qe te mpikset)
You can decorate the cheesecake however your heart desires. I choose to do a simple decoration with fresh nectarines. I had a family dinner just in 1 hour so I didn't put anything on top of nectarines since they would still be fresh in few moments. But the best way its to just brush the nectarines with some honey, they will remain fresh and good-looking 
Mund ta dekoroni cheesecake-un si te deshironi. Une vendosa te bej nje dekorim te thjeshte me nektarina te fresketa. Kisha nje darke familje vetem pas nje ore keshtu qe nuk vendosa asgje siper nektarinave meqene se do te ishin ende te fresketa pas pak momentesh. Por menyra me e mire eshte te lyeni lehte me nje furce pak mjalt mbi nektarinat, do te qendrojne te fresketa dhe te pashme
 Put it again back fridge for another 10 minutes just to firm with the top (I made cherries cheesecake 2) 
Vendose serish ne frigorifer per nje tjeter 10 minutsh sa per tu mpiksur bashke me shtresen e siperme (pergatita dhe cheesecake me qershia)
