Cornflakes Coconut Cookies

Here is another version I promised of the oatmeal raisin cookies. These are the cornflakes coconut ones, and believe me when I say "these are DELICIOUS". Of course you can also eat them if you're on a diet, and you can also reduce the amount of sugar. On this recipe I'm using vanilla crystals instead of extract. I did this just because the extract has a strong flavor and that will effect on cornflakes. I decided on this recipe for cornflakes flavor to dominate, but If you want to use vanilla extract feel free to do it. The rest of it it's super simple, follow the steps and you'll have these adorable babes(yes I consider them my babes, don't judge)

Ja ku eshte nje version tjeter qe ju premtova i biskotave me tershere dhe rrush te thate. Keto jane me drithera dhe arre kokosi, dhe me besoni kur ju them "jane te SHIJSHME". Sigurisht qe ju mund ti konsumoni keto biskota dhe nese jeni ne dite, dhe sigurisht mund te reduktoni sasine e sheqerit. Ne kete recete une po perdor kristal vaniljeje ne vend te ekstraktit. E bera kete sepse ekstakti i vaniljes ka shije te forte dhe kjo do te ndikonte tek dritherat. Ne kete recete vendosa qe shija e dritherave te jete mbizoteruese, por nese doni te perdorni ekstraktin e vaniljes jeni te lire ta beni kete gje. Pjesa tjeter eshte shume e thjeshte, ndiqni hapat dhe do te keni keto 'vogelushe'(po i konsideroj vogelushe, mos gjykoni)


Ingredients for oatmeal coconut cookies:

•  250 gram unsalted butter at room temperature 
• 250 gram brown sugar (200 gram if you're on diet and want to reduce the sweetnes)
• 250 gram cornflakes
• 200 gram flour
• 100 gram coconut flakes
• 2 eggs 
• 1 tsp (5 gram) baking powder
• 1/2 tsp (2.5 gram) vanilla crystals
• 1/2 tsp (2.5 gram) salt

Perberesit per biskotat me tershere dhe arre kokosi : 

• 250 gjalp jo i kripur, ne temperature dhome
• 250 gram sheqer kaf (200 gram nese jeni ne diete dhe doni te reduktoni embelsine)
• 250 gram cornflakes (drithera misri)
• 200 gram miell
• 100 gram arre kokosi e grire
• 2 veze
• 1 tsp (5 gram) baking powder
• 1/2 tsp (2.5 gram) kristale vaniljeje
• 1/2 tsp (2.5 gram) kripe 

In a bowl cream together the butter and sugar. Scrape the sides of the bowl time after time with a spatula making sure the batter is mixed same

Ne nje tas rrih se bashku gjalpin dhe sheqerin derisa masa te jete kremoze. Here pas here me nje spatul mblidh masen ne anet e tasit ne menyre qe masa te rrihet e tera ne menyre te njejte

Add in the eggs one at a time while beating

Shto vezet nje nga nje gjate kohes qe perzien masen

Add in the salt, baking powder and vanilla crystals. Beat well 

Shto kripen, baking powder dhe kristalet e vaniljes. Perziej mire 

Add flour and mix in until the batter is homogeneous (do not over-beat)

Shto miellin dhe perziej derisa masa te jete bere homogjene (mos e rrih me shume se cduhet)

 Add in the coconut flakes and cornflakes and mix well with a spatula or spoon

Shto arren e kokosit dhe dritherat e misrit dhe perziej mire me nje spatul ose me nje luge

Place some baking paper on the cookie sheet. Using an ice-cream scoop or 2 spoons divide the batter on the cookie sheet, make sure to put them apart each-other because they will spread as they bake (put the extra batter in the fridge while some cookies are baking)

Vendos leter furre ne tepsine ku do ti pjekesh biskotat. Duke perdorur nje luge akulloreje ose 2 luge normale shperndaje brumin ne letren e furres, duke u siguruar qe ti shperndani masat larg njera tjetres pasi brumi gjate pjekjes (vendos brumin ne frigorifer gjate kohes qe nje pjese e biskotave piqen)

Baking Temperature : 180 grade C,    Timing :  12 minutes (or until cookies have this golden brown look, make sure for them not to turn into brown)

Temperatura pjekjes : 180 grade C,    Kohe-zgjatja :  12 minuta (ose derisa biskotat te kene marre nje ngjyre kafe te arte, kujdesuni qe te mos kalojne ne ngjyre kafe)

Let the cookies cool on the baking sheet for 5 minutes and then place them somewhere else, letting them to cool completely 

Lerini biskotat te ftohen ne letren e furres per 5 minuta dhe me pas vendosini diku tjeter duke i lene mundesine te ftohen plotesisht
