Once you've eaten one of these cookies you'll never want shop-bought cookies again. EVER, promise you that! These cookies are so delicious and you'll love them more after I confess something, these cookies are made with fibers so you can eat them even if you are on a diet. How cool is that? The combination between vanilla flavor, cinnamon, oatmeal and raisins is perfect and sure you can make them as big or small as you want, but I'm using a big ice-cream scoop since I love them big. The ingredients and steps are super simple so go to your kitchen and make these sweet babies!

Keto biskota jane kaq te mira dhe ju do t'i pelqeni akoma me teper pasi t'ju rrefej dicka, keto biskota jane bere me fibra dhe ju mund t'i konsumoni dhe nese jeni ne nje diete. Sa e mrekullueshme eshte kjo? Kombinimi mes shijes se vaniljes, kanelles, tersheres dhe rrushit te thate eshte perfekt dhe normalisht ju mund t'i beni keto biskota sa te medhaja apo te vogla deshironi, por une po perdor nje luge te madhe akulloreje pasi me pelqejne te medhaja. Perberesit dhe hapat jane shume te thjeshta prandaj shkoni ne kuzhine dhe futjuni punes!
Ingredients for oatmeal raisins cookies:
- 250 gram unsalted butter at room temperature
- 250 gram brown sugar
- 250 gram old-fashioned oatmeal
- 200 gram flour
- 150 gram raisins
- 2 eggs
- 1 tsp (5 gram) baking powder
- 1 tsp (5 ml) vanilla extract
- 1/2 tsp (2.5 gram) salt
- 1/2 tsp (2.5 gram) cinnamon
Perberesit per biskotat me tershere dhe rrush te thate:
- 250 gjalp jo i kripur, ne temperature dhome
- 250 gram sheqer kaf
- 250 gram tershere kokerr (jo e copetuar)
- 200 gram miell
- 150 gram rrush i thate
- 2 veze
- 1 tsp (5 gram) baking powder
- 1 tsp (5 ml) ekstrakt vaniljeje
- 1/2 tsp (2.5 gram) kripe
- 1/2 tsp (2.5 gram) kanelle
In a bowl cream together the butter and sugar. Scrape the sides of the bowl time after time with a spatula making sure the batter is mixed same
Ne nje tas rrih se bashku gjalpin dhe sheqerin derisa masa te jete kremoze. Here pas here me nje spatul mblidh masen ne anet e tasit ne menyre qe masa te rrihet e tera ne menyre te njejte
Add in the eggs one at a time while beating
Shto vezet nje nga nje gjate kohes qe perzien masen
Add in the salt, baking powder, cinnamon and vanilla extract. Beat well
Shto kripen, baking powder, kanellen dhe ekstraktin e vaniljes. Perziej mire
Add flour and mix in (do not over-beat)
Shto miellin dhe perziej (mos e rrih me shume se cduhet)
Add in the raisins and oats and mix well with a spatula or spoon
Shto rrushin e thate dhe tersheren dhe perziej mire me nje spatul ose me nje luge
Place some baking paper on the cookie sheet. Using an ice-cream scoop or 2 spoons divide the batter on the cookie sheet, make sure to put them apart each-other because they will spread as they bake (put the extra batter in the fridge while some cookies are baking)
Vendos leter furre ne tepsine ku do ti pjekesh biskotat. Duke perdorur nje luge akulloreje ose 2 luge normale shperndaje brumin ne letren e furres, duke u siguruar qe ti shperndani masat larg njera tjetres pasi brumi gjate pjekjes (vendos brumin ne frigorifer gjate kohes qe nje pjese e biskotave piqen)
Baking Temperature : 180 grade C, Timing : 12 minutes (or until cookies have this golden brown look, make sure for them not to turn into brown)
Temperatura pjekjes : 180 grade C, Kohe-zgjatja : 12 minuta (ose derisa biskotat te kene marre nje ngjyre kafe te arte, kujdesuni qe te mos kalojne ne ngjyre kafe)
Let the cookies cool on the baking sheet for 5 minutes and then place them somewhere else, letting them to cool completely
Lerini biskotat te ftohen ne letren e furres per 5 minuta dhe me pas vendosini diku tjeter duke i lene mundesine te ftohen plotesisht
