Calzone and doughnuts (mum's recipe)


This is a very special post for me and hope for you too. This is 2 in 1 post where you will the chance to learn 2 ways how to use this dough. We've been using this recipe for such a long time in my family and I never get bored of it. Doughnut is not the perfect word to describe what we call in Albanian language "petulla", but I used it since I didn't know how to call them differently. In this post my mum is cooking and I'm the photographer since my sister's weren't home. Hope you enjoy the recipe and let me know what you think of them after cooking. I didn't use measures because you can do how much you want to, you just need to follow the steps and tips and you'll reach on getting the final product as in the pictures. 

Kjo eshte nje recete shume e vecante per mua dhe shpresoj qe dhe per ju. Eshte posti 2 ne 1 ku ju keni mundesine te mesoni 2 menyra se si ta perdorni kete brum. Ne e kemi perdorur kete recete per nje kohe shume te gjate ne familjen time dhe une asnjehere nuk merzitem me kete recete. Ne kete post po gatuan mamaja ime pasi une jam fotografja, meqenese motart e mia nuk ishin ne shtepi. Shpresoj t'ju pelqeje receta dhe me vini ne dijeni mbasi ta keni gatuar. Nuk kam perdorur gramature pasi mund te beni sa te deshironi, mjafton vetem te ndiqni hapat dhe keshilat e mia per te arritur ne produktin final si ne foto.


Ingredients :
  • flour
  • plain yogurt 
  • 1 egg
  • salt
  • 1 1/2 tea spoon baking powder 
  • oil for frying 

Perberesit:
  • miell
  • kos
  • 1 veze
  • kripe
  • 1 1/2 luge caji baking powder
  • vaj per skuqje 
Make a flour mountain then make a hole in the center. Add the egg, salt, baking powder and some plain yogurt spoons
Bej nje mal mielli dhe me pas hap nje grope ne mes. Shto vezen, kripen, baking powder dhe disa luge kos
The procedure is really simple. You just have to mix all the ingredients together, start adding by hand flour at the wet ingredients. If your batter is too dry than add plain yogurt, if it gets sticky add flour. Work the dough until it becomes one
Procedura eshte shume e thjeshte. Duhet thjeshte te perzieni te gjithe perberesit se bashku, fillo te shtosh me duar miell ne perberesit e lenget. Nese brumi eshte shume i thate shto kos, nese behet i ngjitshem shto miell. Puno brumin deri sa te behet nje 
Add some flour at working surface and work the dough until you have a smooth ball
Shto pak miell ne tavolinen e punes dhe punoje brumin derisa te kesh nje top te lemuar 
Now I will be showing you both ways, how to make calzone and doughnuts. Here are the steps to calzone. First of all it depends on how big or small you want them. All you have to do it to cut the dough in small ones
Tani do t'ju tregoj te dyja menyrat, di te beni kalcone dhe petulla. Ja ku jane hapat per te bere kalcone. Fillimisht varet ne sa te medhaja apo te vogla i doni ju. Gjithcka duhet te beni eshte te prini brumin ne copa te vogla
Look at the little holes in the dough? That is just perfect
I shikoni vrimat ne brume? Kjo eshte thjesht perfekte
Work the little pieces with your hands until you have a nice little ball. Flour the working surface and press just a bit with your hand the dough. Open the dough with a rolling pin, make it about 0.5 cm thick
Punoni copat e vogla te brumit me duar deri sa te keni topa te vegjel dhe te kendshem. Beni me miell tavolinen e punes dhe shtypeni pak me dore brumin. Hapeni brumin me okllai rreth 0.5 cm te trashe
Fill it with whatever you like on the side and close the foil
Mbush me cfare te deshirosh ne ane te petes dhe pas mbylle ate
With a fork make sure to close the edges of the foil and then gently flatten the calzone
Me nje piru mbyll pjeset anesore te petes dhe me pas sheshoje lehte kalzonen
Fry them in medium heat and when removing from the pan put them in a plate covered with a napkin (the napkin will immerse the oil from the calzone)
Skuqi ne zjarr mesatar dhe kur ti vendosni ne pjate sigurohuni qe te keni vene nje pecete fillimisht (peceta do te thithe vajin e tepert nga kalconet)
These are the steps on doing doughnuts. Flour the working surface and press just a bit with your hand the dough. Open the dough with a rolling pin, make it about 0.5 cm thick
Keto jane hapat per te bere petulla. Beni me miell tavolinen e punes dhe shtypeni pak me dore brumin. Hapeni brumin me okllai rreth 0.5 cm te trashe
First cut the foil in stripes and then cut the stripes in rhombus shape
Se pari prini peten ne shirita dhe me pas pritini shiritat ne forme rombesh
Fry the doughnuts in medium heat and when removing from the pan put them in a plate covered with a napkin (the napkin will immerse the oil from the doughnuts)
Skuqi petullat ne zjarr mesatar dhe kur ti vendosni ne pjate sigurohuni qe te keni vene nje pecete fillimisht (peceta do te thithe vajin e tepert nga petullat)
