Homemade Strawberry Ice-Cream


I love ice-cream, all the flavors and I never get enough! I guess everybody does! It's like a love affair :P This is one of my best ice-creams I've made so far in this blog and I'm so happy to share this recipe with you. What I think it's special is that you can still have the "heaven" product by not using an ice-cream machine. We all do love ice-cream, we want some but we never think on doing it by ourselves in home conditions. Well with this recipe you can and believe when I say I loved it. It's a pure strawberry taste that you won't have in bought ice-cream. Just make sure that you do this recipe in a weekend or a day off for you, because without an ice-cream machine you will need time to do this recipe, but in the end I can tell you that is was worth it. 

Une e pelqej shume akulloren, te gjitha shijet do te thoja dhe asnjehere nuk ngopem! Mendoj se keshtu ndihen te tere! Eshte si nje ceshtje dashurie :P Kjo eshte nje nga recetat e mia me te mira te akulloreve qe kam postuar deri me sot ne kete blog dhe jam e gezuar ta ndaj kete recete me ju. Cfare mendoj une se e ben kete speciale eshte fakti qe ti mund ta arrish produktin "parajse" pa patur nevoje per nje makine akulloreje. Te gjithe na pelqen akullorja, ne duam te hame por asnjehere nuk e mendojme ta gatuajme vete ne kushtet e shtepise. Epo me kete recete ti mundesh dhe me besoni kur ju them se une e 'dashuroj' kete recete. Eshte shija e shija e paster e luleshtrydhes gje kjo qe nuk do ta gjeni ne akulloret e blera. Vetem sigurohuni qe qe ta gatuani kete recete ne fundjave ose ne nje dite pushimi per ju, sepse pa nje makine akulloreje do t'ju duhet shume kohe, por ne fund me besoni kur ju them se ia vlen. 


Ingredients for Strawberry Ice-cream:
  •  150 gram sugar
  • 250 ml whole milk
  • 250 ml heavy cream
  • 5 egg yolks 
  • 500 gram fresh strawberries, cleaned and quartered 
  • 1/4 tsp vanilla extract (I'm using vanilla crystals)
  • 1/4 tsp salt
  • 200 gram fresh strawberries, chopped in small pieces

Perberesit per akulloren me luleshtrydhe:
  • 150 gram sheqer
  • 250 ml qumesht i plote (qumesht me % te larte yndyre)
  • 250 ml ajke e embel
  • 5 te verdha vezesh
  • 500 gram luleshtrydhe te fresketa, te pastruara dhe te prera
  • 1/4 luge caji ekstrakt vaniljeje (une po perdor kristal vaniljeje)
  • 1/4 luge caji kripe
  • 200 gram luleshtrydhe te fresketa, te prera ne copa te vogla
In a large bowl, whisk together the egg yolks and sugar for 3 to 4 minutes or until it turns a pale color and thickens in consistency
Ne nje tas te madh, rrih se bashku te verdhat e vezeve me sheqerin per 3 deri ne 4 minuta ose deri sa te kete marre nje ngjyre te celet te verdhe dhe te keni nje perberje te trashe
In a normal sized saucepan, add the cream and milk and bring to a simmer
Ne nje tenxhere normale ne madhesi, shto qumeshtin dhe ajken dhe coje ne zierje
Pour 1 cup of the hot milk mixture into the egg yolk mixture while whisking, then pour the egg yolk mixture back into the saucepan with the remaining milk mixture and cook over low heat for about 5 to 7 minutes or until the custard thickens and coats the back of a wooden spoon(I'll explain what that means) 
Shtiej nje filxhan(une po shtiej nje garuzhde) perberje qumeshti ne masen e te verdhave te vezeve nderkohe qe perzien, pastaj shtiej masen e te verdhave te vezeve ne tenxheren me qumeshtin e mbetur dhe gatuaje ne zjarr te ulet per 5 deri ne 7 minuta ose derisa kremi te trashet dhe te veshe pjesen e mbrapme te luges se drurit (do t'jua shpjegoj c'do te thote kjo)  
Coats the back of the spoon : take a wooden spoon, put it inside take it out and run your finger in the middle of the back of the wooden spoon, if it says separated like in the picture it means it's ready for the next step and of course it coats the bask of the spoon
Vesh pjesen e mbrapme te luges : merr nje luge druri, zhyte brenda dhe me pas nxirre nga masa, kalo gishtin permes mases nga ana e mbrapme e luges se drurit, nese qendron e ndare si ne foto, kjo do te thote se eshte gati per hapin tjeter dhe se ka veshur pjesen e mbrapme te luges
Strain through a fine sieve in a clean bowl, just to make sure if there is any egg curdled 
Kaloje permes nje site te imet ne nje tas te paster, per t'u siguruar nese ka pasur ndonje veze te prere(nese ka kaluar ne zierje gjate gatimit)
Add vanilla and salt, stir and put the plastic wrap touching the custard so it doesn't get that skin on the top. You don't need that. This will go to the fridge for 5 hours or even overnight
Shto vaniljen dhe kripen, perziej dhe vendose qesen e celofonit duke prekur masen ne menyre qe te mos krijohet nje shtrese siper. Nuk ju nevojitet kjo gje. Do ta vendosni kete mase ne frigorifer per 5 ore ose ta lini gjate nates
After 5 hours or overnight you need to pure the strawberries
Mbas 5 oreve ose gjate nates ju duhet te beni pure luleshtrydhet
Take the bowl out of the fridge, take off the plastic wrap and add the strawberries pure. Now you can put this pure through a sieve if you want your ice-cream smoth, but I prefer putting the pure as it is. Stir well
Nxirr tasin nga frigoriferi, hiq qesen e celofonit dhe shto purene e luleshtrydheve. Mund ta vendosesh purene ne nje site nese e doni te bute akulloren, por une preferoj ta vendos purene ashtu sic eshte. Perziej mire
Put the measure in a glass dish
Vendose masen ne nje ene qelqi
Cover the bowl with plastic wrap and put it in the frizer
Mbeshtill tasin me qese celofoni dhe vendose ne frigorifer(ne akull)
Every 30 minutes take the bowl, give it a whisk and put it again in the frizer.This may take 5 hours or maybe more. 
Cdo 30 minuta nxirre tasin, perzieje me nje rrahese dore dhe vendose serish ne akull. Kjo mund te marre 5 ore ose me shume
In the moment that the custard is getting thicker and the sides are almost frozen take the chopped strawberries , put them in and give them a good stir. Re-put in the frizer now until full process (until it will be frozen enough for you, I left it overnight since it was 11PM)
Ne momentin qe masa eshte duke u trashur dhe anet jane pothuaj te ngrira vendos copat e luleshtrydheve dhe perziej mire. Rivendose ne akull tani deri ne proces te plote (derisa te jete ngrire aq sa ju doni, une e lash tere naten pasi ishte ora 11 e darkes)
