Strawberry Cheesecake (No-Bake)


Hello there dear readers! Sorry for being a bad blogger!... This is my favorite post till now, till all my work I've done here! That's because today I will be talking and showing Strawberry Cheesecake recipe, my favorite desert! And thank god I have the right one! What do I mean with that? Well I have showed to you one cheesecake recipe, but now I got to come clean : Mascarpone doesn't work for cheesecake! The previous cheesecake had an interesting taste, but I wouldn't call it actually a cheesecake and it had a really heavy taste, with one bite you would feel like you ate all desert! You wouldn't like that believe me! This recipe is "a piece of heaven"(as I like to call it) and you will feel the same after cooking it and tasting it! So let's start! :D (P.S : sorry for the "bad" quality & lightning of pics)

Pershendetje lexuesit e mi te dashur! Me vjen keq qe kam qene nje blogger i keq!... Ky eshte posti im i preferuar deri tani, pas gjithe kesaj pune qe kam bere ketu! Kjo sepse sot do t'ju flas dhe do t'ju tregoj receten e Cheesecake me luleshtrydhe, embelsira ime e preferuar! Dhe me ne fund e gjeta te duhuren! C'dua te them me kete? Epo, ju kam treguar dhe nje recete tjeter cheesecake, por duhet te them te verteten : Mascarpone nuk ben per cheesecake! Cheesecake i radhes se kaluar kishte nje shije interesante, por une as nuk do ta quaja cheesecake dhe ishte shume i rende, me nje kafshate do te ndiheshe sikur kishe ngrene gjithe embelsiren! Nuk do ta pelqenit kete me besoni! Kjo recete eshte "nje cope parajse"(sic me pelqen mua ta cuaj) dhe do te ndiheni njesoj pasi ta keni gatuar dhe provuar! Prandaj le te fillojme! :D  (P.S : me falni per kualitetin dhe driten "jo te mire" te fotove)


Ingredients for cheesecake:
  • 24 crushed Digestive biscuits (you can use other kinds 2, like: Graham crackers, Ginger biscuits... you can crush biscuits with a food processor or a polythene bag with a rolling pin)
  • 150 gram cold melted butter or margarine (sweetened)
  • 500 gram of Philadelphia cream cheese (or any other cream cheese close to Philadelphia taste, I'm using Buko)
  • 400 gram tin of sweetened condensed milk
  • 125 ml(1/2 cup) lemon juice (be sure to be fresh lemon juice, not lemon from bottle)
  • 250 gram of strawberries cut in chunks (you can also blend, but I prefer small pieces while eating Cheesecake)
Perberesit:
  • 24 biskota te thjeshte Digestive te thermuara (perdor kete lloj pasi llojet e thjeshta ne Shqiperi nuk kane cilesine dhe shijen e duhur dhe nuk duhet ta prishni embelsiren thjesht per zgjedhjen e biskotave...ju mund ti thyeni biskotat me mikser ose nje qese plastike e mbyllur me okllai)
  • 150 gram margarine e embel e shkrire e ftohte (perdor Bitay)
  • 500 gram Philadelphia cream-cheese (ose mund te perdoresh dhe "djath" tjeter por qe te kete shije te ngjashme me Philadelphia)
  • 400 gram kanace qumesht i embel i kondensuar (jo Panda pasi nuk eshte cilesore)
  • 125 ml leng limoni i shtrydhur ( limon i fresket i shtrydhur vete dhe jo limon nga shishe)
  • 250 gram luleshtrydhe te prera ne copa te vogla (mund ti grish dhe ne mikser por une preferoj te kem copa te vogla gjate ngrenies se Cheesecake)
 For cheesecake you need a cake tin and a mixer
Per cheesecake ju duhet nje tepsi me pjeset anesore te levizshme dhe nje rrahese elektrike
To make the cheesecake base mixture, you need to put in a normal sized bowl the crushed biscuits and the cold melted butter or margarine and mix well with your hand or a wooden spoon( I prefer using hand)
Per te bere bazen e cheesecake, duhet qe ne nje tas normal te vendosni biskotat e thyera dhe margarinen e ftohte te shkrire dhe te perzieni mire me dore ose me nje luge druri (une preferoj te perdor doren) 
Pour the base mixture into the tin and press it flat and even (will your hand or any cooking tool which is flat, you can use even the bottom of a water glass or whatever glass)  Leave it in the fridge while preparing the filling.
Shtieje masen ne tepsi dhe hape me dore ne menyre te barabarte duke ushtruar presion (me ore ose me ndonje mjet kuzhine te sheshte) Lere ne frigorifer deri sa te mbarosh mbushjen
 
 
In a large bowl put Philadelphia or cream cheese you're using and add  sweetened condensed milk. Mix well with electric mixer
Ne nje tas te madh vendos Philadelphia ose "djathin" qe po perdorni dhe shto qumeshtin e embel te kondesuar dhe perziej mire me rrahesen elektrike
 
 Add the lemon juice little by little while mixing. This is a very important step
Shto lengun e limonit pak nga pak duke e perzier masen. Ky eshte nje hap shume i rendesishem
 
Add strawberry chunks and mix again
Shto copat e luleshtrydheve dhe perziej serish
Take the base, pour the mixture onto the cake base. With a spoon or a spatula try to make the surface smooth. Chill in the fridge for 6 hours, even more if you have time (to allow the cake to set)
Merr bazen, shtiej masen dhe me nje luge ose spatul mundohu te krijosh ne shtrese te ngjeshur mire dhe nje siperfaqje te sheshte. Lere per 6 ore ne frigorifer, dhe me shume nese keni kohe (ne menyre qe te mpikset)
 After 6 or so hours take the cheesecake and with a knife round once over the cake tin and than remove it
Mbas 6 a me shume oresh merreni cheesecake dhe me nje thike bjerini perqark tepsise dhe me pas hiqeni pjesen anesore
